Luis Álvarez-Príncipe Luis Álvarez Príncipe is the Executive Chef of the Puerto Rico Convention Center. A native of Bayamón, Puerto Rico, he started his culinary career 14 years ago, as a cook at the 1,000-room El Conquistador Resort. Since then, his calling has taken Chef Luis around the world to expand his knowledge and enrich his skills. Back home, he has participated in the opening of various successful hotels and restaurants, such as The Westin Rio Mar, Wyndham Old San Juan, and Hyatt Dorado Beach Club House. Along the way, as a member of the 2002 Puerto Rico National Culinary Team, he took home two Gold and one Bronze medals, as well as the Commis of the Year award conferred by the US Department of Agriculture. Chef Luis has also proven to be a natural-born mentor for a new generation of culinary talent in Puerto Rico. In his capacity as Dean of the Culinary Arts Program of the Caribbean Culinary Institute for the past three years, student attendance has increased 175%. As part of their training, many of Chef Luis’ students provide support to the Puerto Rico Convention Center’s Food & Beverage team, while gaining on-the-job experience under his guidance.
