Mario Pagán As Chef and owner of two of Puerto Rico’s finest restaurants, Chayote and LemonGrass, Mario Pagán’s beginnings were watching his mother lovingly prepare meals in his San Juan home. Well rooted in Caribbean cuisine Mario has a strong affinity with good food and its creation. His professional career has taken him to The Grand Café, Bugattti, Tamarind and Norman’s New World Cuisine in Miami. After attending Johnson & Wales Chef Pagán went on to train with his mentors first and foremost Alfredo Ayala, founding Chef of Chayote, later selling the locale to his disciple. |
