Nelson Rosado-Fernández

Nelson Rosado, Executive Chef for the Courtyard By Marriott Isla Verde Beach Resort, began his culinary journey over 20 years ago with training in various cuisines including Caribbean, American, European and Asian. His accomplishments include serving as a member of the National Iron Chef team in 2004, 2005, 2006 representing Puerto Rico. He is a 17-time medalist of the American Culinary Federation (A.C.F) and was a member of the Puerto Rico National Culinary Team in 1998, 1999 and 2000. In his capacity as Executive Chef for Courtyard By Marriott Isla Verde Beach Resort, Nelson’s responsibility is to create a cuisine that appeals to a broad range of tastes by adding original touches that creatively blends Caribbean, American and Old World flavors. Such creations have made found Nelson a place among the islands’ highly-respected chefs.
