Ruiz Carlos

Carlos is the co-founder and head baker of El Horno de Pane in San Juan, Puerto Rico, in charge of a daily production of a unique variety of hand made breads, pastries and viennoiserie. Carlos’ baking style, techniques and formulas are mainly French, an influence he received from French mentors and colleagues, to which he is ethically committed to follow and respect. An avid reader, Carlos has a very academic approach to bread baking, and is constantly studying and conducting research to improve his techniques and products, and stay on top of global developments in bread baking. El Horno de Pane opened its storefront on January 2017, after at least 8 years travels, practice and professional trainings, which include the San Francisco Baking Institute and the French Pastry School.
